Ireland is a nation facing, for the first time in its long history, the problems of prosperity. So new is the situation that it was only in the 1990's that an Environmental Protection Agency was created. The Irish are quite boggled by this modern question - what to do with the leftovers.

Peter and Aideen, owners of Byrne's Mal Dua House, contacted an Irish firm for advice in dealing with the leftovers at Mal Dua.

With help, they devised an odourless and modern composting system using ecological principals. The process is automated and clean and and the end product is downright valuable. The compost is harvested once a year and is much sought after by organic gardeners.

Byrne's Mal Dua House is the first accommodation in all of Ireland to create such a system. Galway County Council was impressed enough to make Mal Dua House a show site for their Organic Food and Environmental programmes.

And the flowers like it too.
